Ingredients
Fermentables:
- 4 kg Maris Otter malt (6 EBC, 80%)
- 500 g Vienna malt (8EBC, 10%)
- 400 g Crystal malt (150EBC, 8%)
- 100 g Biscuit malt (50EBC, 2%)
Hops:
- 50g East Kent Goldings hops (AA 5%) at 60′
- 40g East Kent Goldings hops (AA 5%) at 15′
- 40g East Kent Goldings hops (AA 5%) at 5′
Yeast:
- 2 packages (11,5g) of Fermentis SafAle S-04
Water:
- Standard bitter water profile
Brew Directions:
- Mash step at 65°C for 60 minutes
- Mash-out at 78°C for 10 minutes
- Fly sparge with hot water at 78°C
- 60′ Boil
- Chill wort to 25°C and add yeast
Fermentation:
- Fermentation at 16°C for 3 days
- Fermentation at 18°C for 9 days
- Fermentation at 20°C for 2 days
- Cold Crash 3 days
